Chocolate was first introduced to France in Bayonne 400 years ago making the town France’s chocolate capital. Chocolate making in Bayonne, France dates back to the early 17th century when Jews fleeing the inquisition settled in the Saint Esprit area on the right bank of the Adour River. Using the recipe for chocolate brought back from their travels to the Americas, they became the first in France to transform cocoa beans. The town’s chocolate makers soon became known for the quality of their ingredients and precise blending and their fabulous chocolates continue to uphold Bayonne’s reputation today.
