Of all the Basque specialties the word famous Bayonne Ham steals the show and has been appreciated here since the Middle Ages. Bayonne celebrates its famous Jambon de Bayonne every year over the Easter holiday weekend with the Foire au Jambon.
In existence since 1424, the fair gives visitors a chance to discover the traditional methods of production used to make Bayonne ham. These traditionally made hams are available to sample and for purchase from over 30 local producers.
Festivities begin at 8am on Thursday morning with the best free-range ham contest. From over 100 entries, a jury selects the top 3 hams to be sold at auction at the end of the contest. Lively lunches are served in the marquee and the fair ends on Sunday with the swearing in of new members of the Bayonne Ham Appreciation Society.
For 4 days the historical heart of the town beats to the rhythm of traditional music and various sporting and culinary contests. Feel free to indulge!
